Hi loves! I must admit, it feels pretty good to be blogging again. And I can’t think of a more perfect dish to kick it off with! This recipe is quite simple, & we all know I love simple. I’ve been trying to reset my body lately. If you pay attention, your body is the best doctor. It will let you in on some secrets that most of us probably already know. 1. You need to eat better. 2. You need to decrease this or increase that. 3. You need to eliminate this. Therefore, I made the decision to eat more veggies & maintain a healthier diet. Not only is this dish beautiful to the eye, it’s also packed with fresh veggies. When I decided to make this dish, it was a spare of the moment thing. Literally!! I wanted something quick, easy, filling, & healthy. Now there you have it. Also, I wanted to thank each of you for the requests/comments for this recipe! I had no idea I would have gotten so many requests. Thank you again! This quiche’ is also such a fun family dish. Side note: This recipe is totally freezable! Pop it in the freezer & it will be just as fresh as the day you made it.
Approximately 40 min/375 degrees
Accent & Slap ya Mama ( or seasonings of choice)
1 deep dish pie crust (frozen)
6 large eggs
1 cup of shredded Mexican Style Cheese
1 cup of heavy whipping cream or whole milk (I used heavy whipping cream)
1/2 cup of freshly chopped vegetables (I used mushrooms, red peppers, fresh broccoli, & onions)
1/2 of a jalapeno’ diced (exclude if you don’t care for a bit of heat)
1 cup of fresh spinach
1/2 cup of chopped tomatoes
2 TBSP of butter
-Poke a few small fork holes in the bottom of your frozen pie crust & place in oven for 5 minutes. Remove & set aside.
-In a skillet, melt your butter & add all of your chopped vegetables. Cook for about 10 minutes until veggies are softened/sauteed. (Season lightly with seasoning of choice) In a separate bowl, add your eggs, whipping cream, & cheese. (Season) Whisk/combine well. Add your remaining ingredients. Combine. Lastly, pour mixture into your pie crust & bake until done. Enjoy!
