This recipe deserves a praise all on its own, simply because I got my picky 14 year old to eat every last bit of it! Not only that, she asked for avocados! Wait what??? Yaassss!!!! God is good! I’m talking about a kid who cringes at the thought of greens! Pretty bad huh? Imagine how I must feel, & I’m a health food enthusiast & a blogger! Needless to say, it’s my daily duty to come up with recipes that are veggie approved! And moreso, it has become one of my missions to not only get her to eat healthier, but to grow a love for more greens! We’re getting there, slowly but surely. But for now, let me gloat just a bit more on how much she loved these wraps. One thing I’ve learned as a mother, is every child is different & unique in their own way. Each has their likes & dislikes. Same goes with food. But the one thing I must do, is to make sure they’re eating healthy. Some things are just not up for negotiation!
Today was one of those “I really don’t feel like cooking” days. I just wasn’t up to it. Can anyone else relate? Great! I’m not the only one. That’s why I CANNOT stress enough the importance of meal prepping. It saves you time/energy. Just pack it up in the fridge and/or freezer in an air tight container, & you will be so thankful! Trust me on this. Today I was thankful!!! These wraps were pretty much simple to make, but having some left over cauliflower rice to throw in made it even better. This meal took all but 15-20 mintes to prepare. A win win situation! I’m here for it! Ok, enough talk. Here’s what you do & what you’ll need.
Cook Time: 15-20 minutes
1 medium pkg of extra lean ground beef
1/2 of a small onion chopped
1/2 of a bell pepper chopped
1/4 cup of pre cooked cauliflower rice (add more if desired)
1 8/oz can of tomato sauce
6 large leaves of a Romaine heart lettuce
1/2 of a avocado diced
1 small roma tomato chopped
Slap Ya Mama seasoning
crushed red pepper topping
Note: season to taste, and/or use season of choice…
In a large skillet, add your ground beef, chopped onions, bellpeppers & all seasonings except for crushed red pepper. Cook on medium/high heat for about 10 minutes. Once browned, add in your precooked cauliflower mixture & tomato sauce. Stir occasionally. Reduce heat & let cook for another 5-10 minutes. Remove from heat. Scoop your beef mixture into your wraps, & top with chopped tomatoes & avacados. Sprinkle with crushed red pepper.
