Cauliflower is one of the easiest, tastiest, healthiest low-carb vegetables out there. It is also a pretty hot commodity now a days. Cauliflower has been underated for quite some time, but it has climbed it’s way to the top of our plates! Cauiflower can be used in several different ways & for various dishes. The head of a caulifower can go a long way! Let me count the ways…… Califlower can be used as a rice, a crust for pizzas, mashed, raw with dip, in salads, roasted and/or fried. The list can be endless!
I had a 1/2 of a head of cauliflower in my fridge, so I decided to make a dish. It was on the verge of going bad, so I certainly didn’t want that. Cauiflower rice is really filling & it can be eaten as a “stand alone”, with some protein or meat of choice, or along side or topped with some veggies. I kept it simple this time, but the taste was wonderful! This recipe only calls for 4 ingredients. Let’s get started!
Cook Time: 5-10 minutes
1 tbsp of butter (or extra virgin olive oil)
1/4 of a small piece of yellow onion (finely chopped)
1 clove of garlic (finley chopped)
1/2 head of cauliflower
Fresh parsley for topping optional
Rinse your califlower & dap dry. Pull apart your cauliflower into smaller portions of florets, & place into a food processor. Pulse about 3-4 times, or until the consistency of rice & set aside. In a skillet melt your butter, add your chopped onions/garlic & saute’ on medium heat for about 1-2 minutes. Add in your cauliflower rice, salt/pepper to taste. Continue to cook for another 5 minutes or so, stirring in between. Reduce heat & cover for another 5 minutes until steamed texture. Turn off heat & remove. Enjoy!
