There’s nothing I enjoy more than eating a salad year around. I can eat salads literally EVERYDAY without boredom. Salads can be catered in so many various ways. Spring/Summer seasons are the best, because most fruits & veggies are in the peak of their season. Even so, most fruits/veggies can be frozen to enjoy at a later date. I admit, as much as I love salads, they can become bland if you continue to eat them in the same manner day after day. Therefore, I like to spice things up! One thing that draws my attention to foods are the layout. The colors, ingredients, & the nutritional value.
Zoodle salads are the perfect way to enjoy a salad without using your traditional base, which is greenery (lettuce). It is so delicious & it has half the carbs as a regular salad. Why? You’re using zucchini! What??? Yes, you read right. Zucchini! Zucchini alone, has a high content of omega-3 fatty acids, zinc, & protein. Moreover, vitamin B1, vitamin B6, vitamin B2, & calcium in zucchini assure optimal health. Zoodle salads are another great way to switch things up & still enjoy the benefits of your favorite salad ingredients/toppings. Zoodles are made with a spiralizer to form the shape of noodles. It requires no cooking for a cold salad. Totally optional if you choose to do so. Now, let’s get to the topic at hand!
Ingredients
l lrg zucchini
2 small grape tomatoes (sliced)
a handful of black or kalamata olives
1/2 of a yellow onion
1 cucumber
1 tsp of olive oil
1/2 of a freshly squeezed lemon
Seasonings
black pepper
pink himalayan salt
accent optional
Dressing
zesty lemon (homemade)
Preparation
Wash all above produce. With your spiralizer, make your zoodles. Place your zoodles in a large salad bowl of choice. Add in your tomatoes, olive oil, cucumbers, olives, & onions. Using another small bowl, take your lemon & squeeze your lemon juice (with a lemon squeezer) into your small bowl. Add your salt, pepper, & accent into your lemon juice. Season to taste. Stir together & mix well. Drizzle your lemon dressing on top of your salad. Give it a good stir to ensure that all of your lemon dressing is marinated into your salad. Enjoy!
