Turkey Quinoa Stuffed Peppers

Stuffed peppers are one of my absolute favorite dishes. They are so delicious, flavorful, easy, & healthy. Stuffed peppers are another great meal prep option. Peppers can also be frozen & completely savored when ready to eat later. You can use any colored peppers of choice. These are just what I had on hand. Colored peppers carry different flavors & they taste so wonderful! Another plus for cooking stuffed peppers are adding various ingredients. You can add as much or as little as you want. The more the merrier!

This particular recipe is old, but new with a twist. I decided to incorporate quinoa. If you’re not certain what quinoa is or what it can be used in, check out my previous blog entitled “Quinoa 101.” Adding quinoa will boost your protein & keep you fuller longer. Ground turkey is my choice of meat because it’s all white/lean. Perfect combination! This recipe calls for 5 simple ingredients. Peppers, meat of choice, quinoa, shredded cheese, & 1 can of tomato sauce. Here’s how you prepare.

Ingredients 

3 large green peppers

Shredded Mexican style cheese

1 small pkg of lean ground turkey

2 cups of cooked quinoa

1 small can of tomato sauce

Seasoning

season of choice (to your liking)

Cook Time

30 minutes with preheated oven of 400 degrees

Preparation

Take your peppers and wash. Cut your peppers width wise in half. In a large pot, fill with water & bring to a boil. Place your peppers in the boiling water & allow them to cook for about 10 minutes until slightly softened. Remove from pot & place to the side. In a separate skillet, cook your turkey until browned, add your seasonings, cooked quinoa, & stir in tomato sauce. Stir occasionally & remove from heat. In your oven pan, place your peppers down, slightly season them, & start stuffing with meat mixture. Once done, place in oven & allow to cook for roughly 30 minutes. Add your shredded cheese, place back in oven, turn oven off, & allow cheese to melt. Once your cheese has melted, remove & you’re done! Enjoy!
