Well, it’s been a moment since my last blogpost. The majority of my content is posted on my social sites, so be sure to click the “stay connected’ option here on my site & it will take you directly there. But of course, I always redirect my readers/viewers back here! Now that I’ve gotten that little spill out of the way, let’s talk food. Or shall I say corn? As most of you know, I’m pretty much obsessed with fresh foods! Especially fruits and vegetables. Nothing compares to homegrown fruits/veggies straight from the garden. It’s on a whole other level of taste, & once you’ve tasted that life, you really don’t want to go back to the norm. I primarily recommend everyone to opt for the garden, or the next best thing. The next best thing would be local Famers Markets, Whole Foods, Sprouts, etc. If you can’t, totally fine, there’s still no excuse for choosing NOT to eat healthier.
I’ve always been a fan of corn on the cob. Corn is amazing in every way, in my opinion. You can grill it, boil it, tin foil it, & even fry it. Oh yeah! I absolutely said “fry!” Have you ever tried skillet corn? If not, you’re seriously doing yourself a disservice. Maybe it’s a southern thing, but I will have to share that recipe for another post. For now, let’s stick with the boiled corn on the cob. Simple recipe, that really requires no instructions. It only calls for 5 ingredients. Corn on the cob, butter, water, salt, & pepper. That’s it! But first, let me provide you with a few health benefits of corn.
- Corn has antioxidant activity, which increases when you boil it.
- Sweet corn is loaded with 2 phytochemicals that promote healthy vision.
- A midsize ear offers a helpful 3-gram dose of dietary fiber
- Corn also contains vitamin C and magnesium
Cook Time: 15-20 minutes
6 ears of corn
1 stick of butter
salt & pepper
In a large pot, fill about 1/2 way with water. Bring to a boil. Add butter & corn. Reduce heat. Let simmer for about 10 minutes. Remove corn, and add salt/pepper to taste. Serve & enjoy!
