This is one of my FAVORITE 30 minute meals! I will be incorporating more quick & easy 15 and 30 minute recipes on my blog! So be sure to hit the “follow” button to ensure you’re notified of all new blog/recipe posts! Now, the purpose of my quick & easy meals pretty much speaks for itself! Quick & Easy!! I don’t know about you, but the majority of the time, I don’t have time to be slaving in a kitchen over a good home cooked meal. I just don’t! The truth of the matter is, 1. I have a full-time job. 2. I’m a Mother 3. I’m a wife.. Not that I don’t appreciate it, nor love the fact that I can make a big home cooked meal daily, I just don’t have the time. But what I do have time for is making sure my family eats a good hearty/healthy meal!. So, these stuffed peppers are my “go to’s”! The wonderful thing about stuffed peppers, are the ability the freeze them if you make more than your desired amount! And no worries, they will taste just as fresh whenever you decide to eat them later! Now, here’s what you’ll need for some successful peppers! Keep in mind, these can be made with whatever meat option of choice. Or, they can be made COMPLETELY vegetarian.
3 large peppers (any color will do)
1 small pkg of lean ground turkey
white/brown rice (precooked) but optional
1 pkg of shredded cheese
1/2 of a small stick of ground sausage (optional) Note: I normally don’t eat pork, but I wanted the robust flavor of the sausage mixed with the turkey.. Makes it a bit more flavorful.
1/2 of a small onion (chopped)
1 4oz. can of tomato sauce
season of choice & to taste
Take your peppers, wash, & cut in half width wise across. Dig out the center and place them into a large pot with preheated water on top of stove. Let them boil just enough to where they get slightly softened (roughly 10 minutes). Remove them from pot & place them in oven dish of choice. In a separate skillet, prepare your meat mixture along with your seasonings, & chopped onion. Cooked until browned. Remove from heat, then drain any excess grease. Place back on top of stove & add in your tomato sauce & precooked rice (if desired). Stir all mixture & allow to cook for another 2-3 minutes.Turn off heat! Now, take your mixture & stuff into your peppers. Allow to cook in oven for about 15-20 minutes on 375 degrees. Once you’ve allowed it cook, remove & add your cheese on top, place back in oven, & let it melt for the remainder of the time. Once you notice your cheese melted to your desire, remove from oven. Done! Note: your meat/peppers are basically cooked before you place in the oven. So use discretion on how long you choose to let it oven cook. Enjoy!
