Gosh, I had no idea that I would have such great feedback and requests for this recipe. This dish was literally prepared at a “spare of the moment” thing and I was completely clueless as to what I would incorporate with it. Seems like those ideas can be the best ones! I knew that I was basically baking chicken but I had VERY little to work with. My husband and I haven’t taken the time to do a grocery haul! (no judgement)But it’s on top of my “to do” list. I’m a vegetarian now, so the one thing I keep a plenty of is veggies! I would normally pretty much make my own tomato glaze, but hey…. this wasn’t an ordinary day! One thing I’ve ALWAYS loved/been a fan of is applying plenty of veggies in my dishes! Whether it’s a meat dish or what have you. It’s such a beautiful thing to see the different vibrant colors of a dish, as well as taste the different flavors each carry. Another win, you get all of your meat/veggies in that one dish! I live for a great flavorful dish that doesn’t require a lot of extra additives. I pretty much knew I was using onions & spinach, but I also wanted to add another veggie in that would boost the flavor. Hmmmmm… at this point I decided to look in our pantry and whala! I saw the can of Hunts diced tomato & basil!! For the win!!! Now, I knew I could make magic happen! So, here’s what I did!
1 pkg of chicken legs
1 28oz can of hunts diced tomato basil garlic, & oregano (see above link)
1 onion chopped
1 small bag of baby spinach
grilled chicken seasoning
Note: the Hunts diced tomato is very bland, so season to taste.
Preparation: Roughly 1 & 1/2 -2 hours depending on the size of your chicken. (I used fairly big chicken legs, so it took roughly 2 hours)
Preheat oven to 375 degrees. Take your washed chicken legs, season thoroughly with season of choice, & place in baking dish. Dump your can of Hunts tomato in & spread evenly. Add in your onions, & distribute all of your spinach on top. Lastly, take some aluminum foil, cover, & allow bake time. Enjoy!!
