When I tell you I love omelettes, believe me, it’s an understatement! I could probably eat them in the mornings, & in the evenings. Normally I try to have fresh picked veggies from my moms garden on hand, if not, I try to go with the closest thing to freshness in the market. As stated from my previous blogs, I love, love, & more LOVE tons of veggies in my recipes. The colors alone are just beautiful, the flavors are out of this world, & the benefits are life changing! My husband bought me this food processor like months ago. Literally! Like months! (don’t judge me) So, I finally decided to put it to use in this recipe. Ok, now that we’ve gotten past my omelette/veggie obsession, along with me being a temporary slacker, let me share on how to make this beauty!
Preparation: 30-40 min. Preheat oven to 350 degrees
Ingredients:
8 small eggs
1 chicken breast (shredded/chopped)
1 small onion
1/2 red pepper
1/2 green pepper
2 roma tomotoes
2 handfuls of chopped kale (add to your desire and/or substitute for spinach)
Seasoning:
liquid aminos ( drizzle to desired taste)
accent
cajun seasoning
a pinch of red pepper
onion powder
Simply toss your cracked eggs into a bowl, whisk eggs together,add all above ingredients, season, & give another good whisk. Once you’ve completed, transfer omelette into desired dish & place in oven. Enjoy!
